Forked Boston: A Conversation with Saru Jayaraman

One of the largest and fastest-growing segments of the United States economy is also the absolute lowest-paying employer in the U.S.—the restaurant industry. Offering many young people the opportunity to begin their working lives and providing those with few marketable skills entrance into the job market, the restaurant industry plays a significant role in American culture.

FORKED: A New Standard for American Dining by James Beard Leadership Award winner Saru Jayaraman offers an insider's view of the highest— and lowest—scoring restaurants for worker pay and benefits in each sector of the restaurant industry, and with it, a new way of thinking about how and where we eat.
